Better Than The Original Factory Edge

I sent in some used Zwilling Henckels knives that I have acquired over the last few years of estate sales shopping. They were in relatively good condition, but needed a good sharping. I have expensive sharpening equipment and did a number of the knives myself. Several of the knives, however, needed a professional touch up. They came back from Knife Aid with a better edge than the brand new Henckels I had just purchased.
